Blondies with Speculoos (Cookie Butter)

Ever heard of Speculoos?

In North America, I'm pretty sure it's called 'Cookie Butter'. But I have a boyfriend with relatives that live in Holland and they call it Speculoos over there. OH. MY. GOD. It's the best thing ever. It's creamy, buttery, sweet, and subtly spiced. It's like peanut butter on crack. The cookies are sort of like a spiced-shortbread, then they whip them up to create a buttery spread and it's perfect on anything. My favourite way to eat it is on a spoon. In your mouth. And repeat.

I decided to make my favourite dairy-free blondies and spread a layer of Speculoos in between...and it worked - I'm pretty happy about it 😅

Ingredients


1/2 cup of Melt Organic Butter (melted) 1/2 cup + 2 Tbsp of tightly packed brown sugar 1/4 cup sugar 1 large egg + 1 egg yolk 2 teaspoons vanilla extract 1 1/4 cups all-purpose flour 1/4 teaspoon baking powder 1/2 teaspoon salt 1/2 cup white chocolate chips 1/4 cup of Speculoos (Cookie Butter)

Method

Preheat oven to 350 degrees F and line a 9x9 pan with parchment paper.

Combine melted butter (Melt Organic for Dairy-Free version) and sugar in a large bowl and mix well.

Add eggs, egg yolk, and vanilla extract and stir until smooth. Set aside.

In a separate bowl, whisk together flour, cornstarch, baking powder, and salt. Gradually stir flour mixture into wet until completely combined.

Fold in white chocolate chips. Spread half of the blondie batter into prepared pan. Take 1/4 cup of Speculoos spread and put in the microwave for 10 seconds (so it's a little runny and easy to spread). Spread a layer of melted cookie butter onto the blondies then spread remaining blondie mixture on the top. Bake at 350 degrees F for ~35minutes or until a toothpick inserted in the center comes out clean.

Allow to cool before cutting. Enjoy!
