Anyone else have a granola phobia? Anytime I eat granola, I serve myself double the daily recommended serving and it ends up being over half of my caloric intake for the day - oops. Not to mention all that sugar...how is it even possible to sneak that much sugar into one teensy serving? I will never understand.
So I had learned to keep far far away from store bought granola - it normally does me more harm than good 😅 But my granola phobia days are in the past and I have a new appreciation for granola now - mainly because I can put whatever I want into it. Chocolate? Why not? Dried fruit? Hell yea. Cinnamon? YES. Whatever combo you can dream up, you can make it happen (que Bon Jovi - It's My Life). Ready to rid yourself of your granola phobia? Make this everyday granola where you control the sugar, flavours, and pretty much everything about it.
Ingredients
1/2 cup of gluten-free whole rolled oats 1/4 cup pecans (chopped) 1/2 cup of almond milk 1/2 tsp cinnamon (heaped) 1/2 tsp nutmeg 1/4 cup dried cranberries (or any mix-ins of your choice) 1 tbsp of dairy-free butter (I love using Melt Organic) 3 tbsp of maple syrup 1 tbsp natural peanut butter Preheat oven to 300 degrees f. In a medium bowl, mix together rolled oats, pecans, almond milk, cinnamon, and dried fruit. Drizzle melted 'butter' and maple syrup on top. Mix together until evenly combined. You can add more sweetener depending on taste. Pour onto a baking sheet lined with parchment paper. Press together into a circle or a square and bake for 15 minutes then remove from oven break apart into chunks and continue baking for 15 minutes more until it reaches your desired crispy-ness. Store in an airtight container for ~2 weeks. Enjoy!
