Gooey Chocolate Chip Cookies

Is there anything more comforting than a fresh-from-the-oven chocolate chip cookie? Your whole place smells like a bakery and that nostalgic homey feeling sets in - sort of like the hug you never knew you needed.

I love cookies, they are one of those things that I can never have just one of. Especially if they are soft. Soft, chewy, melty, cookies. And that's just what these babies are...

Now, I always second guess myself when it comes to taking the cookies out of the oven - they never seem done. But I PROMISE YOU, don't put them back! Be patient and let them cool down on the pan for a couple of mins, then move to a cooling rack. They will continue to cook once they are out of the oven and they will be perf if you just let them be ;)

I'm pretty sure you deserve these cookies. Did you get out of bed? That's enough to deserve a cookie I'd say. 😉

 

Ingredients

1/2 cup of salted butter 1/2 cup white sugar

1/4 cup packed light brown sugar

1 teaspoon vanilla

1 egg

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

3/4 cup Camino Fair Trade chocolate chips

Method


Preheat oven to 350 degrees. Melt salted butter until just almost liquid (about 30 seconds). Add to a mixer fitted with a paddle attachment and add white sugar and brown sugar and beat until combined. Add vanilla and egg and beat for an additional minute. Mixture should look light in colour. In a separate medium sized bowl, sift together flour, baking soda and salt. Slowly add the dry ingredients to the wet ingredients in two separate parts. Mix until just combined. Add chocolate chips of your choosing and mix in with a wooden spoon until evenly incorporated. Avoid beating with your mixer so the chips don't break apart. Roll into 12 large circles and press them down so they are a disc shape (about an inch tall at most) and bake for roughly 10-12 minutes. The cookies will look like they are not done but THEY WILL BE! They will continue cooking on the tray and be perfect once cooled. Enjoy!
