I've been baking up a storm lately 🤪But I'm finding myself in a little situation - who's gonna eat all the damn leftovers?
That's why when I decided to make a batch of Granola, I wanted to just enough to last me a couple days sooo, that's how this small batch of Granola was born.
UGH is there a better duo than peanut butter and banana? Meh, maybe peanut butter and chocolate but this is a close second. The cinnamon gives that granola that warm and cozy feeling, the peanut butter gives it that soft nutty taste, and the banana chips add in that extra crunch. This recipe made me enough to last me a few days. I added mine to the top of my smoothie bowls (obsessed) and just ate it straight up.
Rolled Oats - I use good ol' Bob's Red Mill. Always. But I warn you, do not use quick oats! You'll end up with mush 😉
Dairy-Free Butter - Melt Organic is my go-to when doing any sort of dairy-free baking. It has honestly worked as the perfect substitute in every single recipe. Highly recommend!
Brown Sugar - Light brown sugar works great in this recipe. I use Rogers yellow sugar.
Maple Syrup - I've been trying to find a good organic Maple Syrup other than Kirkland brand! If you know of anything other than Costco Brand or Aunt J, lemme know 😉
Banana Chips - Okay, so I actually bought these Elan Banana Chips originally as a photo prop for some banana bread I was making, but I had a bite of one and... I think I fell in love. It took me a second to figure out what was going on. It was more like a potato chip taste than that dried fruit taste you'd expect. Honestly though, once I got past that I was hooked! These are SO good to add as that crunchy component in any recipe and perfect for granola. I highly recommend!
Peanut Butter - In other baking recipes, normally the sugar loaded peanut butters work the best. Not this one! Use your favourite all-natural peanut butter (I used MaraNatha) and it will be perfect. I've been meaning to try this out with almond butter...I think it would be 🔥

Ingredients
1 cup of rolled oats 2 Tbsp Melt Organic Butter - Melted 2 Tbsp packed brown sugar 1 Tbsp Maple Syrup 1 heaped tsp of Cinnamon 1 Tbsp natural peanut butter
1/3 cup Banana Chips (roughly chopped) 1 - 2 Tbsp Sunflower Seeds
Method
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
In a medium sized bowl, combine all ingredients except for peanut butter. Mix with a wooden spoon until evenly combined.
Add your peanut butter and continue mixing until no peanut butter clumps appear. Add chopped banana chips and sunflower seeds.
Dump mixture out onto prepared baking sheet and lightly press into a circle (roughly 5 inches wide). bake for 15 minutes.
Remove tray from oven and using a fork, break up into chunks depending on how big you would like your granola pieces to be.
Place back in oven and bake for another 5 minutes.
Remove and let completely cool. You're done! Store in an airtight container for up to one week or eat it all at once. You do you.
